For all of the dishes below, set your oven to 170c &remove all the cardboard lids
Lamb's Liver 1. Warm the onions in the oven for 10 minutes, while they warm... 2. Pan fry the liver on one side, in a little vegetable oil, on a medium heat for 2 minutes. 3. Turn the Liver over & add the marjoram butter. Cook for a further 2 minutes. 4. Take the liver out of the pan & rest it on a kitchen paper towel for a further 2 minutes. 5. Plate it by building the onions, liver & bbq sauce
Smoked Trout Salad 1. Warm the fish & peppers in the oven for 10 minutes. 2. Place the leaves on your plate or in a bowl. 3. Flake the fish & peppers on to the leaves. 4. Sprinkle the seeds & dressing over them to finish.
Baba Ganoush 1. Warm the aubergine in the oven for 5 minutes. 2. Warm the bread in the oven for 2 minutes. 3. Dress your plate with the herby yoghurt & smoked oil.
Mains For all 3 mains, put the potatoes & carrots in the oven for 20 minutes. Heat the gravy in a saucepan & warm the Yorkies in the oven for the last 2 minutes. Heat the greens in a pan with a little salt for 2 minutes.
Beef - leave the meat out at room temperature whilst the sides heat up. Pour the hot gravy over the meat just before plating up.
Poussin - brush the bird with the herby oil & heat in the oven for 30 minutes or until piping hot. (the bird has been steam cooked already)
Tart- heat in the oven on a wire rack (pastry side down) for 20 minutes.
Truffles - Eat at room temperature & don't forget to share
Pecan Pie - You can eat it cold, room temperature or as we like, warmed through in the oven for 10 minutes
